#thechefstory #atw1
Bringing to you these melt-in-mouth hot[Thai street food]momos/dumplings brushed with garlic-soy-coriander-olive oil ...ready to be dunked in red chilli-vinegar-garlic sauce!....And you read just right👍🏻these dumplings have no maida/no wheat but tapioca[sabudana] layering!!and the taste??
Well, I guess it’s the best replacement to maida I could experiment on momos which I’ve loved eating otherwise too!!
Tips:
🥟soak the tapioca just right with equal amount of water!

Steps
- 1
Soak 1cup tapioca pearls in 1cup of salt water, for 4-6hrs.Ensure the pearls don't get too mushy. With wet hands mash it into a smooth, pliabledough and let it rest till you prepare the filling.
- 2
Chopped Veg filling : onion, garlic, ginger, cabbage, carrot and mushrooms
Chopped Non-veg filling : onion, garlic, ginger, minced chicken[any meat], cabbage
Sauté the ingredients with salt, pepper and a drizzle of olive oil.
- 3
Grease the palm and make balls from the dough to roll into as thin a
circle as pliable. - 4
Lift it and place a teaspoonful of filling, gently bringing the edges
together. Pinch away any extra
dough and bind it gently as you do a laddoo. - 5
Any cracks in the process, just bring the
joints together! It’s a very forgiving recipe. - 6
Gently scoop when done and brush the piping hot momos with:
Olive oil fragrant with chopped garlic, chopped coriander and drops of soy sauce! - 7
Place them in the steamer and
let it cook for 10-12min.
[time would vary on size and
thickness]
