Thai-Style Massaman Chicken Breast

Ingredients

Serves 2 servings
  1. 10 1/2 ozchicken breast (about 300 grams), cut into palm-sized pieces
  2. 2 tablespoonsLobo Massaman curry paste
  3. 4 clovesgarlic, peeled
  4. 4small shallots, peeled
  5. 1 cupcoconut milk (about half a box, 120 ml)
  6. 1 teaspoonlight soy sauce
  7. 1 pinchblack pepper
  8. 1 teaspoonsugar

Cooking Instructions

    Marinate the chicken with soy sauce, black pepper, and a little sugar.

    Sauté the Massaman curry paste in oil, then add half the coconut milk.

    Add the marinated chicken breast and simmer. Season with fish sauce and a little more sugar to taste. Simmer until the coconut milk and curry flavors are absorbed into the chicken, about 10 minutes.

    Add the garlic and shallots, continue simmering for 5 more minutes, then turn off the heat. Serve.
