In a non-stick pan, melt the butter over low heat to prevent it from burning, then add a drizzle of extra virgin olive oil to cover the pan. Brown the veal slices on both sides, then add the lemon juice and cover. Cook for about 3-4 minutes (depending on the thickness of the slices), then turn the meat and cook for a few more minutes without a lid; when the sauce thickens, add salt and add some chopped parsley.
