Veal Paupiettes in White Wine

In a pressure cooker, heat olive oil and add the diced bacon or pancetta, mushrooms, minced garlic, onions, and shallots. Sauté gently without browning.

Add the veal paupiettes and brown them on all sides.

Meanwhile, peel the potatoes and cut them into cubes.

Once the paupiettes are nicely browned, add the white wine, tomato purée, and green olives.

Cook for 30 minutes, then add the potatoes. Season with salt and pepper, reduce the heat, and cook for another 25 minutes.

Ten minutes before the end of cooking, sift in the flour to thicken the sauce.

We recommend serving this dish with a light, dry, unoaked red wine.
