First of all boil the potatoes. When it cools down, peel it and mash it roughly.

Heat oil in a pot. Now add cumin to it and let it get brown. Now add turmeric and chilli powder to it and mix it well. Now add tomato puree to it and cook it on medium heat until oil separates.

Add mashed potatoes to it along with water and give it a good stir. Now add coriander powder, salt, garam masala, amchoor, and black salt to it and cook it for 5 minutes on medium heat.

Lastly add coriander leaves and turn off the heat. Serve aloo with puri or paratha.
