Wash and Soak Chana overnight and discard the water.

Wash and peel the potatoes, cut them into cubes, and chop the onions, tomatoes, and green chilies.

In a wok heat mustard oil, add Panch Phoron, let it splutter add chopped onions, and stir until onions are softened.

Add green chilies. Fry for 1 min.

Add Chana, and potatoes and cook for 2 mins. Cook covered

Add ginger-garlic paste, stir well, add tomatoes and stir for 2-3 mins, add turmeric powder, red chili powder, and salt and mix well. Add little water if the potatoes and onions stick to the bottom. The tomatoes should soften

Add water and cover to cook for 5 mins, set aside

Plate with Sattu Kachori’s and enjoy a Bihari delicacy
