Cook the pork ribs in a skillet over medium heat in their own juices for 20 to 25 minutes.

Slice the onion into rings.

Once the meat is browned, add the onion and sauté until just golden, but do not let the onion burn.

When everything is nicely browned, add 1 teaspoon of marjoram.

Meanwhile, make the salsa: Boil the peppers and tomatoes in 2 1/2 cups water (about 600 ml) for 15 minutes.

Finely chop the garlic cloves and grind them raw in a molcajete (or mortar and pestle). Using raw garlic gives the ribs a delicious flavor.

Next, grind the cooked peppers and peeled tomatoes in the molcajete until smooth.

Once the salsa is ready, pour it over the browned meat and stir to combine.

Add salt to taste. Rinse the molcajete with a little water and add it to the meat. If you want more broth, add a bit more water and let everything simmer for 10 minutes to blend the flavors.
