Not a recipe as such, but a delicious way to use up leftovers. When I cook up some tasty tandoori chicken, I often times have a couple of pieces that aren't consumed on the day. After they've been chilled in the fridge overnight I quite enjoy making this sandwich to use them up.

Left over tandoori chicken thighs (I used 1 1/2), sliced,
2 slicesfresh white bread,
Around 40g cucumber, sliced thinly,
A fewfresh coriander leaves, chopped roughly,
1 tbspmango chutney,
1/2 tbspmayonnaise,
1sprinkle of sea salt to season

Lay out the bread slices. On one spread the mayo thinly to cover completely. On the other spread the mango chutney.

Lay over the cucumber pieces on the side with the mayo. Season with salt. Then lay the chicken pieces on the side with the mango chutney. Add a scattering of coriander leaves.

Put the two slices together, cut into halves, eat and enjoy! :)
