For marination - in a bowl add mutton, ginger paste, garlic paste, add turmeric powder, red chilli powder, Kashmiri red chilli powder, yogurt, salt and mix well. Set aside to marinate

For Barista - in a pan heat mustard oil, add sliced onions and on medium flame cook until golden brown, set aside retaining the oil. Add this barista to the blender

For the paste - add nutmeg. Zaitri to the barista and make a smooth paste. This is the essence of the Jhol

For the Jhol - in the wok with the remaining oil add sugar, caramelise and then add bay leaf, coarsely grated garam masala and add the marinated mutton, on low flame cook until oil surfaces. Approx 30-40 mins

When oil surfaces add the paste and mix well and cook for another 10 mins, add water after mixing in the remaining spices and stir well

Add to pressure cooker and pressure cook for 4 whistles until mutton is soft and the Jhol is dried half

Depressurise and add ghee and garam masala powder, stir and set aside

Serve with rice and enjoy Durga MahaNabami
