How to make vanilla sugar. Get 1 to 2 pound bag of sugar. In your bin add a vanilla bean. Add sugar. Let sit for at least a month before using. When you remember shake your bin once a week until a month is due. After a month let it be! I use the sugar for all my baking purposes. After sugar is used up add another vanilla bean to bin. After the next batch of sugar is used, take out one of the old beans, replacing it with another bean and pound of sugar. DO NOT throw away that old bean. YUM!!!!

Ingredients

  • 1 lb.Butter (room temperature)
  • 8eggs (separated)
  • 3 cupsVanilla sugar
  • 3 cupsflour
  • 1/3 cupand 2 tsp. Bourbon
  • If not using vanilla sugar add 2 tsp vanilla extract instead of bourbon
  • 2 tsp.Almond Extract
  • 3/4 cupPecans (chopped)

Steps

    Preheat oven 325.

  2. 2

    Prep: chop Pecans. Spray 3 loaf pans. Spread 1/4 cup of chopped Pecans on bottom of loaf pans.

    In a mixing bowl (large) add butter and 2 cups of vanilla sugar until creamy.

    Separating eggs, add egg yokes one at a time.

    In a cup add bourbon and almond extract.

    At the lowest speed, add 1 cup of flour then add 1/3 of the cup liquid. Scrape bowl, mix. Continue adding 1 cup flour then 1/3 liquid then scraping two more times. Set aside.

    In a separate bowl whip egg whites until stiff. Add remaining cup of sugar to whites.

    Fold meringue to yolk mixture until thoroughly mixed.

    Add mixture into the 3 loaf pans as evenly as you can.

    Place on baking sheet. Cook for 1-1/2 hours or until auburn brown on top. Stick toothpick in the middle of cake. If it comes out clean, they are done!!! The longer the cake sits the better it gets! Enjoy!
