Rice with chickpeas (Edre)

Another Arab meal made of a very delicious mixture of rice and chickpeas (Hummus). We call it Edre or Qedra, and it's a well known folkloric dish in Palestine 🇵🇸. İt's a good choice on lunch, and İ highly recommend using lamb meat instead of chicken.

Another Arab meal made of a very delicious mixture of rice and chickpeas (Hummus). We call it Edre or Qedra, and it's a well known folkloric dish in Palestine 🇵🇸. İt's a good choice on lunch, and İ highly recommend using lamb meat instead of chicken.

Sear the meat or chicken with olive oil and onion for about 7 minutes. Don't forget to add salt and spices

After that, add 2.5 litres of boiled water till it starts boiling, then turn the heat down and wait for 30 minutes

Meanwhile, cut two medium-sized onions and 6 cloves of garlic, and wash 800g of long rice then wash it and soak it in water.

When the meat/ chicken is ready, get it out of the broth, and drain the rice.

Sear the chopped onion, garlic and the chickpeas with 2 tsp of ghee, and a little bit of olive oil, til the onion shimmers. Don't forget the spices.

Add the rice and stir for about 3 minutes. You'll need 1tsp of salt, curry, cumin, and any favoured spices. ((İf you choose to cook it with meat, add the meat to the mixture, if chicken, don't))

Add a litre of chicken or meat broth and let the mixture boil on low heat til the broth completely absorbed.

You can fry the chicken or grill it.
Decorate with fried almond if you like - 9
