One of my favorite local ingredients is my dry prawn also known as oporo. I use it when cooking local meals. I love the aroma and taste it gives when you cook with it. #Ichoosetocook

Heat up pot, once it's hot add little oil, add little salt and little pepper, pour in your rice and stir fry for about 5 mins

Pour powdered coconut milk into a bowl and add little water mix then set aside.

Once you are done stir-frying the rice, remove from the heat and set aside. Heat another pot on fire,

Add the remaining coconut oil, once it's hot enough pour in onion, pepper, crayfish, dry prawn, dry fish, salt and knorr cube, stir fry and then pour in your coconut milk mix, allow it simmer for a minute

Add your stir-fried rice, add little hot water to the level of the rice and adjust the seasoning if necessary. Reduce heat to low, and place parchment paper or foil over the pot,

Cook for 20 minutes on low heat, add little hot water if you check and the rice is still strong. Remove from heat once rice is soft enough

Serve with fried goat meat and enjoy
