In a large mixing bowl, combine all-purpose flour, salt and nigella seeds. Now add water, little at a time, and knead to a semi-stiff dough. Cover and keep the dough aside for 15 minutes.

In another bowl combine flour and oil. It should have a free flowing consistency. Set it aside.

Knead the dough again for five minutes. Divide the dough into equal size balls. I got six equal size balls.

Now roll one dough ball as thin as possible with a rolling pin. Keep it aside. Roll all the remaining five dough balls and keep them aside.

Place one of the rolled out dough on a clean surface and apply the oil-flour paste evenly over it. Sprinkle some dry flour over it. Place the second rolled out dough over it. Again apply the paste and sprinkle dry flour. Repeat the process for the third and fourth rolled out dough. Except for the fourth one add only the paste.

There are two ways to do it. Roll all the layers together tightly from one end to another and form a log and then cut into 1 inch pieces or first cut into 1 inch strip and then roll it and seal the ends. Take each piece and flatten it gently. Roll it again and make medium size puri. Do the same for the rest.

Heat oil in a deep frying pan over medium heat. Add the puri and fry until lightly golden brown in color on both sides. Fry only one at a time. Remove on paper towel to drain away the excess oil. Once cooled, store it in an airtight container at room temperature. It stays good for 15 days.
