California Farm Smoked Eggplant Hummus

Our California climate is similar to Lebanon, we grow the same vegetables, but Lebanon has older, proven recipes. This is our adaptation of a Lebanese recipe for eggplant hummus. Called Baba Ganoush. Great with dinner as a dip or appetizer, meat substitute or salad for veggies, fruits, crackers, pita bread, cheese, chicken wings, olives, pickles. stays fresh for a week in the fridge, longer if you cover the hummus with a layer of olive oil. You can freeze baba ganoush after you drain off the liquid from the bottom of the container first.

Ingredients

1 hour
2 people, 1plastic 1 pound tubs with lid
  • 3fresh purple eggplants, 2 pounds total, yields 1 pound roasted flesh, grilled over mesquite charcoal and smoked over oak wood
  • 4 Tbsroasted Tahini sesame seed cream (see my recipe in Cookpad)
  • 2whole California elephant garlic bulbs, roasted
  • 4 TbsCalifornia olive oil
  • 4 Tbslemon juice
  • 2 Tbsplain yoghurt
  • Sprinkle sweet red paprika powder
  • Sprinkle chopped parsley
  • Equipment: grill, cast iron skillet, food processor, plastic tub with airtight lid
  • Cost: eggplants $2, garlic $1, tahini $1, olive oil, other $1, baba ganoush $5 per pound tub

Steps

  1. 1

    Stab eggplants with knife point before grilling. Grill and smoke whole eggplants till soft throughout, 1 hour or less, in barbecue on mesquite charcoal with oak wood. Peel and compost skin, scoop soft flesh into food processor with spoon.

    Roast the cloves of 2 elephant garlic bulbs in cast iron skillet. Peel garlic cloves.

    Make puree of garlic, tahini sesame cream, lemon juice, yoghurt, olive oil, salt, in food processor. Add chunks of roasted eggplant and pulse to the consistency of orange marmelade spread.

    Sprinkle sweet red paprika powder and chopped parsley over mix for color, serve with chips or pita or store in one pound plastic container with airtight lid in fridge. Can be frozen, but drain off the liquid from bottom of container if you plan to freeze the baba ganoush. Fresh for a week in the fridge. Serve as appetizer, salad course, or dip with pita bread, crackers, veggies, cheese, fruit, chicken wings. Enjoy.
