Besan Burfi or Gram Flour Fudge is a traditional North Indian melt in mouth soft and creamy sweet made with roasted gram (chickpea) flour ,ghee, sugar syrup and assorted chopped nuts.Decorate it the way you like with silver or gold leaf or chopped nuts and dried rose petals.The magic behind this creamy texture with a nutty flavour is how basic simple ingredients like besan,ghee,sugar and spices are treated and combined.The outcome is a rich and fragrant delicacy ! Heat ghee (clarified butter) and oil in a non-stick pan.Add besan.Mix well with the ghee.Roast it stirring constantly on medium to low heat till the color changes and there is a nice aroma of roasted besan.As it gets fried the ghee begins to release from besan.At this stage add 2 tbsp milk and keep on stirring till it gets a smooth creamy texture.With the back of a spatula break all lumps if any.The colour of besan will change to deep golden and become aromatic.

Combine sugar and water in a pan.Add a pinch of orange food colour.Cook on medium heat till sugar dissolves and reaches one string consistency. Add a pinch of salt to balance the sweetness.

Let the syrup cool for 5 minutes. Then pour it into the partially cooled besan mixture. Temperature of both should be warm.Stir gently till well mixed.With the help of a spatula smoothen the texture.Heat 1 tsp ghee in a separate pan and lightly roast chopped dry nuts.Add it to the besan sugar mix and stir to combine all.

Grease a cake tin or microsafe glass bowl placing a butter paper in it.As soon as besan nuts and sugar syrup are well mixed,pour it into the lined bowl.Smooth out the top of the burfi and sprinkle some chopped or slivered nuts and few dry rose petals.Press the nuts and rose petals on the surface so that they stick to the besan burfi.Allow to set at room temperature for an hour.

Cut into desired square shapes big or small and serve.Store upto 3 days at room temperature or refrigerate for extended shelf life.Enjoy Besan Burfi as a delicious aftermeal dessert.
