Fresh Coconut and Fried Gram Chutney

An amazing addition to an array of Chutneys in any Indian household. Every Indian housewife has an umpteen ideas of delicious Chutneys or Dips up her sleeves which we use in our everyday routine. Be it with a steaming hot South Indian meal or a streetfood Chaat or a simple Lunch or Dinner at home, Chutneys always have a special place in every home.
This particular Chutney is a simple one with Fresh Coconut and Fried Gram and goes very well with Dosas and Idlis. A must have variation to the simple Coconut Chutney. Easy to prepare, it takes just a few minutes. And that too because of the roasting part. It's important to give it a good flavour and texture.

Dry roast the daal at first. Now grind all the ingredients listed. Use only minimal water. Do not make it watery.

Heat oil. Next add the mustard seeds and the curry leaves along with the dry red chillies. Season the chutney with this tempering. Mix well and serve.

A piece of tamarind can also be used if desired. Lemon juice also can be used instead. Though it is good on it's own, it's totally upon one's choice and preference. Enjoy! Yum!
