I don't usually prefer eating eggs, but in winter we sometimes have them. Today I made egg bhurji, which is prepared with very few spices.

Add 1 teaspoon oil to a nonstick skillet. Add the finely chopped onions, ginger, and green chili, and sauté for 2-3 minutes. Add the finely chopped cabbage and sauté for another 2-3 minutes.

Crack the eggs into a bowl, add salt and red chili powder, and beat well with an egg beater or whisk.

Pour the egg mixture into the skillet with the sautéed vegetables. Cook, stirring constantly, until the eggs form small pieces. Let cook until golden. Add the finely chopped cilantro.

Serve with bread or paratha.
