Ingredients

  • 1 can (15 oz)black beans, drained and rinsed
  • 1 can (15 oz)pinto beans, drained and rinsed
  • 1 can (14.5 oz)petite diced tomatoes
  • 1 can (15 oz)sweet corn, drained
  • 1 can(12.5) chicken breast, drained & flaked (or 2 1/2 cups cooked/shredded chicken)
  • 1 can (28 oz)green enchilada sauce
  • 1 can (14 oz)chicken broth
  • 1 packet (2 tbsp)taco seasoning
  • 1/2 tspcumin
  • 1/2 tspchili powder
  • 1/2garlic power
  • Topping
  • 1 cupcheddar cheese shredded
  • limes, for garnish
  • tortilla chips, for serving

Steps

25 minutes
  1. 1

    Combine all the ingredients into a large pot and bring to a boil over medium heat.

  2. 2

    Lower heat and let simmer for 20-25 minutes.

  3. 3

    Serve warm with lime wedges, or shredded cheese, and tortillas chips.
