Ingredients

  1. 1 can (15 oz)black beans, drained and rinsed
  2. 1 can (15 oz)pinto beans, drained and rinsed
  3. 1 can (14.5 oz)petite diced tomatoes
  4. 1 can (15 oz)sweet corn, drained
  5. 1 can(12.5) chicken breast, drained & flaked (or 2 1/2 cups cooked/shredded chicken)
  6. 1 can (28 oz)green enchilada sauce
  7. 1 can (14 oz)chicken broth
  8. 1 packet (2 tbsp)taco seasoning
  9. 1/2 tspcumin
  10. 1/2 tspchili powder
  11. 1/2garlic power
  12. Topping
  13. 1 cupcheddar cheese shredded
  14. limes, for garnish
  15. tortilla chips, for serving

Cooking Instructions

25 minutes

    Combine all the ingredients into a large pot and bring to a boil over medium heat.

    Lower heat and let simmer for 20-25 minutes.

    Serve warm with lime wedges, or shredded cheese, and tortillas chips.
