It's basically a tempered Rice. An easy to do main course meal that can be enjoyed at home on any day. It's a great option for both Lunch or Dinner. Easily done with simplest of pantry staples, this is my go to meal when I don't want to cook an elaborate meal when iam alone for Lunch. This can be a great choice for the kids tiffin box too. And I usually pack it with either boiled Egg or Fried Egg strips.
It's a steal. My children loves it to the core.
That's it. As simple and easy as that. Nothing much complicated. Made with a few ingredients, it is absolutely delicious. Although it can be enjoyed on it's own, it tastes super yum with some fried Potatoes or Eggplants or even plain old Poppadoms or Papad. Any homemade Chutney also is a good combination.

In a pan, heat oil and add both the Mustard seeds. After half a minute, add Curry leaves and Dry Red Chillies. Next, add chopped Onions and saute until golden brown.

Now add the cooked or leftover Rice. Also add some chopped Coriander Leaves. Give it a good mix. Cover and let it heat up for about 5-8 minutes.

Serve hot as it is or with any Pickle of choice, Poppadums and Ghee. Yum!
