Sweet potatoes in spicy porridge beans

Add water to a pot about 4 cups, bring to boil, meanwhile, rinse beans and drain, set aside

When water boils, add beans, when it boils, add seasoning and salt, cook till 90%soft or done by adding little more water

Now, add sweet potatoes,press them in with a wooden spatula, top up with water to be same level with beans and potatoes

Once it boils, taste to adjust with little salt, cook till water is almost dry, remove from heat

In a pot, add oil, set on medium flame, heat it up, add ginger and chilli Pepper Powder, reduce flame

Stir with a wooden spatula frequently, now, when well combined and tender, add onions on low flame, stir frequently till onions become tender and crispy

Pour sauce (ewa agoyin sauce) into beans and potatoes, stir well, return to heat covered for 1 min on medium flame

Remove from heat
