Salad with crispy Iberian ham and pomegranate

This is a tasty salad that, accompanied by some warm, crusty bread will make the perfect quick, easy and tasty dinner. I live in Spain, hence the ham. But in UK crispy bacon will hit the spot perfectly!!

This is a tasty salad that, accompanied by some warm, crusty bread will make the perfect quick, easy and tasty dinner. I live in Spain, hence the ham. But in UK crispy bacon will hit the spot perfectly!!

Heat the ham in a pan over a moderate heat for a few minutes. When the fat starts to crisp, put the slices on a plate with kitchen roll to soak up the excess fat. While the ham is crisping up, de-seed your pomegranate (tip: bash the pomegranate on all its sides on your kitchen surface. Think of something that makes you passionate or angry and bang away, on all sides. Then cut open and simply push the seeds out).

Put the salad leaves in the bowl. Add the onion, cut in very thin slices, and the pomegranate

Finally add the ham, mix well. Add olive oil, vinegar and salt, mix well and.. Enjoy!!
