Rajwadi Khichdi

Khichdi is a comfort food for all Gujaratis. When we are tired, travelling or sick, we miss khichdi. We can make many different types of khichdi, but rajwadi khichdi is very delicious and different from our routine khichdi preparation which is prepared using many different kinds of vegetables and dry fruits. It tastes really good served with pickle, kadhi and rice papad (papadi).
Rajwadi Khichdi

It tastes really good served with pickle, kadhi and rice papad (papadi).

First of all mix rice, moong dal and toor dal and wash it for 3 to 4 times. Now add water to it and soak it for 15 minutes. Now add it to the cooker along with groundnuts and potatoes. Now add turmeric and salt to it along with four cups of water and cook it in the pressure cooker until 3 to 4 whistles. Let it cool down.

Heat oil and ghee in a pot and add all the whole spices to it. Now add mustard seeds to it and let it crackle. Now and cumin, when it changes its colour, add hing and curry leaves to it. Add onion to it and saute it until light pink in colour. Now add ginger, garlic and green chilli paste to it and cook it on medium heat for half a minute.

Now add all the dry spices along with chopped tomatoes and mix everything well. Cook until tomatoes are soft. Now add carrots, green beans and peas to it and mix everything well. Add cashew nuts and raisins to it.

Now add khichdi to it along with hot water as needed. Cook it on medium heat for 8 to 10 minutes. You can add water according to your requirement, if you like soft khichdi then add more water. Now add spring onion and coriander leaves to it and turn off the heat.

Serve rajwadi khichdi hot along with ghee. This khichdi tastes really delicious served with Gujarati kadhi, spicy mango pickle and papad or rice papadi.
