Kaju Karela Subji

This recipe is my mom's special recipe which she taught me. It is a simple but utterly delicious combination of bittergourd or karela stir fry with added crunch of cashews and spices. The result is amazing!My humble effort to recreate her recipe.
Karela is a blessing for diabetic and obese patients as it reduces sugar levels, builds insuline tolerance and helps to reduce cholesterol. Cashews provide immunity boosters and antioxidants along with magnesium, zinc and sodium.

First, wash the bitter gourd and cut each into 3 to 4 large pieces. Then with the help of a spoon handle, remove the seeds carefully. Then cut into thin slices. Transfer to a large bowl. Add 1/4 tsp turmeric powder and 1 tsp salt. Turn well to coat the pieces. Then cover and keep for 1 hour.

Now collect the pieces in a clean cloth and gently squeeze out any moisture formed. Then heat oil in a large iron kadhai. Add mustard seeds, cumin seeds, curry leaves, asafoetida and mix. When seeds pop up, add the bitter gourd pieces. Add turmeric powder and stir cook for 2 minutes.

Then add the cashew pieces and turn well. Keep turning continuously and cook open. It will take 15 minutes, cook on slow to medium heat.

When karela turns golden, soft all over and cashews are all coated with spices and aromatic, add salt, sugar and rest of the spices. Mix well and stir cook for another 5 minutes. The Kaju Karela curry is ready.

Garnish with chopped coriander leaves and serve with daal and phulka roti. Enjoy!
