First, roast the sevai (vermicelli noodles). Heat oil in a pan, then add mustard seeds, cumin seeds, and chopped onions. Sauté until the onions are soft.

Add tomatoes, salt, and red chili powder. Sauté, then add 1 cup water (about 240 ml).

Add the roasted sevai. Cook until the water is absorbed, then mix in the lemon juice.

Garnish the delicious sevai poha with cilantro and serve.
