Inspired by @isabella, I made this recipe for sautéed liver with onions—one of my favorites.
Steps

Cut the beef liver into small cubes. Season with salt and squeeze the juice of one lime over the liver. Place in a bowl and set aside for a few minutes.

Dice the tomatoes and onion. Sauté them in oil in a hot skillet, then set aside.

Once the liver is browned, add sliced onions to another skillet with oil. Sauté until golden, then add to the liver. Finally, add the sautéed tomato and onion mixture to the liver.

In a skillet with hot oil, fry the 4 yellow chiles until golden on both sides.

Place the 4 yellow chiles on a plate and season with lime juice and salt to taste.

Enjoy as tacos or however you like, with tomato chili salsa. I used store-bought salsa, but you can use your favorite.
