Cut the speck into small cubes, then cook it in a skillet without oil or butter, letting it brown in its own fat until crispy.

In a nonstick skillet, add a drizzle of olive oil and the diced chicken. Cook and season with salt on both sides.

When the chicken is almost done, add the pesto and stir well to coat the chicken. Add 1 tablespoon of all-purpose flour (or rice flour) to thicken the pesto sauce slightly.
