Here's another recipe that's great after having leftover turkey. Adding the turkey into a luscious bechamel sauce keeps the meat moist. This also utilizes more of your leftover veggies. A classic a la king uses onion but I had scallions. It also uses mushrooms but my husband is allergic to them. I added an extra bell pepper in place of them. You can serve this classically by itself, with toast points or over rice. One thing I like about this is I can make it using leftovers but then freeze it for later use.

Ingredients

30 minutes
6 people.
  • 4 cupscooked turkey meat, cubed
  • 1red bell pepper, diced
  • 1yellow bell pepper, cubed
  • 5scallions, diced
  • 5 clovesgarlic, minced
  • 1 cupsliced cremini mushrooms
  • 1 1/2 cuppeas
  • 6 tablespoonsbutter
  • 6 tablespoonsflour
  • 3 cupschicken broth
  • 3/4 cupheavy cream
  • 1/2 teaspoonsalt
  • 1/2 teaspoonfresh ground pepper

Steps

30 minutes
  1. 1

    Get all your ingredients chopped and ready. Assembly of this dish is quite fast.

    In a large pot over medium heat melt butter. Add garlic while butter melts.

    Cook garlic 1 minute. Add remaining vegetables, salt and pepper and saute about 4 minutes until the just start getting tender.

    Add flour and stir well. Cook this mixture about 2-3 minutes. Add in the chicken broth. Stir.

    Cook 2 minutes before adding cream. Once cream is added and mixed in, add turkey and peas. Turn heat to low.

    Simmer about 5 minutes while more broth.

    Serve hot over whatever side you prefer. I usually always use rice.
