Pineapple and Ginger Prawn

Ingredients

  1. 4Pineapple, peeled and diced
  2. 45 mlCoconut Oil
  3. 800 gPrawn
  4. 10 mlSalt
  5. 5 mlPepper
  6. 9 slicesGinger
  7. 6Spring Onion
  8. 150 gPickkled Ginger
  9. 3Red Chillies
  10. Sauce
  11. 2,5 mlSalt
  12. 115 mlTamato Sauce
  13. 40 mlSugar
  14. 15 mlLight Soy Sauce
  15. 25 mlCorn Starch
  16. 75 mlWater

Cooking Instructions

    Peel the pineapple and remove the core. Soak in salted water for 10 to 15 minutes.

    Heat oil in a wok or pan over medium-high heat. Add the prawns, salt and pepper and cook until the colour is changed. Set aside.

    Add a bit more oil in the wok. Saute the old ginger and the white parts of spring onion until aromatic. Add pineapple chunks and cook till Pineapple softens slightly.

    Pour in the sauce. Stir in the pickled ginger and red chilli. Toss back the prawns in the wok.

    Sprinkle the green parts of spring onion on top. Serve immediately. Enjoy!
