Palong CHACHHORI / Spinach Dry Curry

Presenting a very simple, low oil and no spice vegetable which is a slight dry preparation ( CHACHHORI ) and the main ingredient is Spinach along with accompaniments like Cauliflower, Brinjal, Flat Beans ( SIM ) and Potato.
This healthy dish is highly relished during winter.

Steps

Roughly chop Spinach, chop all other vegetables.

Fry Bori / Badi till golden brown and keep aside.

In moderately heated pan/ kadhai, add oil, add onion seeds and allow to sizzle then add all vegetables + little salt and sauté for 3-4 minutes.
Add little water, cover and cook for 2-3 minutes so that veggies gets cooked and turn soft. - 4
Now add chopped spinach + turmeric + salt and sauté gently and nicely for few minutes, spinach shrinks.

Lastly add fried Bori / Badi and Cook till water from spinach evaporates and veggies incorporate well with spinach.
Dish is ready. - 6
Serve either with steamed hot rice or roti / paratha.
