Steps

Char the eggplant and tomato.
Make a slit on the eggplant. Put garlic cloves in it.
Brush oil.
Next take a tomato make slight slits. Brush oil on it too. - 2
Char nicely. Let it cool down.
After it cools, remove the skin. - 3
Next, chop and keep the ingredients ready!

Keep peas blanched with a little salt.
Next mash the smoky brinjal, garlic cloves, and tomato. Keep aside. - 5
Next heat mustard oil. Splutter mustard seeds, and cumin seeds.
Add chopped garlic. Saute till brownish. Then add onion. Saute till brownish.
Next, add chopped tomato. - 6
Add salt, turmeric powder, red chilli powder, and curry powder. Mix and saute till the tomato becomes mushy.
Next add peas, onion greens, and coriander leaves. - 7
Mix and cook all together.
Now add mashed brinjal and tomato.
Mix well. - 8
Let it be on slow heat for some time. Add garam masala. Mix.

Yummy baingan bhorta is ready!!
Serve with rice/ roti - 10
