Ingredients

  1. 3-4med sized potatoes
  2. 1/4 colive oil
  3. 1/2-1table salt (depending on preference)
  4. 1table Knorr chicken broth powder
  5. 1table garlic powder
  6. 1/2 TSPoregano
  7. 1/2 TSPcumin
  8. 1/2 TSPsmoked paprika

    This so far has worked with any kind of potato we've tried...Scrub and wash 3 to 4 med- med large potatoes. Poke holes in them and bake at 425F for 45 mins. Turning over 1/2 way through. Stir all spices together and set aside.

    Fork the potatoes, once they feel soft, pull and cool for 10 minutes. Leave oven on at 425F.

    Using hands or fork (if still too hot to touch) cut each potato in halve and in halve again and each halve into halves again (it's ok if they break) and place onto cookie sheet.

    Cover potatoes in 1/4 cup olive oil and 1/2 of the spice mix and stir. Bake 15 -20 minutes, until it starts to get crispy. Stir again if you feel you should add more of the spice mix, add now. Bake another 15-20 minutes until both sides crispy. Serve immediately.
