Dal (lentil)is a staple food in every Indian household. Each region has its own way of cooking it that vary in taste and ingredients. Masoor dal cooked with onion is a classic Bengali dal which is sparsely spiced and a comforting meal.It goes well with almost any bhaja ( fritters) or torkari ( dry sabzi ), mixed pickle and served with steamed rice.This dal can be cooked with or without onions.Both ways they taste delicious.

Ingredients

3 servings
  • 1/2 cupMasoor Dal (Red Lentils)
  • 3-4 cupswater
  • 1/2 tspturmeric
  • 1 tbspmustard oil
  • 1 tspghee (optional)
  • 1/2 tspkalonji,methi,radhuni phoron (tempering)
  • 1dry red chilli
  • 2-3green chillies
  • 1onion chopped finely
  • 4-5garlic cloves minced
  • 1 tbspcoriander chopped

Steps

    Wash the dal well 3 to 4 times.Drain the dal and add it to a pressure cooker.Add 2 cups water, salt to taste and turmeric powder. Close lid and pressure cook upto 2 whistles.Release steam after 2 minutes.Add 1 cup more water and mix well.

    Heat mustard oil in a wok.Reduce flame when the oil is smoking hot.Sprinkle minced garlic.Lightly toss and add finely chopped onion.Saute till light brown.Add this to the dal.Stir and boil till dal is cooked but not mushy.Heat 1 tsp more oil and sprinkle kalonji (nigella),methi (fenugreek),radhuni (ajmod /wild celery) seeds and 1 dry red chilli.When they splutter,pour this tempering over dal and give it a boil.

    Garnish with chopped cilantro (coriander),green chillies.This dal is light and can be cooked with or without onion and garlic.Bith ways they taste delicious. Serve this Bengali Style Masoor Dal hot with steamed rice alongwith some fritters,dry curry and pickles.
