Bengali Alur Chop/Aloo Chop Recipe. A popular evening deep fried street snack from Kolkata. A potato stuffing is made and shaped into a tikki. It is then coated with gram flour batter and deep fried until crisp and golden in color. This snack can be served with a spicy chutney alongwith a hot cup of tea or coffee.

Bengali Alur Chop/Aloo Chop Recipe. A popular evening deep fried street snack from Kolkata. A potato stuffing is made and shaped into a tikki. It is then coated with gram flour batter and deep fried until crisp and golden in color. This snack can be served with a spicy chutney alongwith a hot cup of tea or coffee.

Firstly, for making the potato stuffing, steam, peel and mash the potatoes and set it aside.

Heat oil in a non-stick kadai. Add the sliced onions and saute it for a minute or two. Add the ginger garlic paste and continue to saute till the onions are golden brown in color.

Reduce the flame to low and add the turmeric powder, kashmiri red chilli powder, coriander powder, cumin powder and chaat masala and saute for 30 seconds.

Next add the steamed and mashed potatoes and mix until well combined. When done, allow it to cool down completely.

Now to make the gram flour batter, add gram flour to a large mixing bowl. To it, add rice flour.

Also add kashmiri red chilli powder, turmeric powder, ajwain, salt and baking powder and mix it well. Add water little at a time and mix it well into a lump free batter. Set it aside.

Take a small portion of the aloo mixture. Form it into a ball shape and then flatten it a bit. Keep it aside.

Heat oil in a deep frying pan. Take a potato ball and coat it with the gram flour batter. Carefully add it to the hot oil and fry till the lower part is golden in color.

Flip and fry again till the lower part is golden in color.

When done, remove on a kitchen towel to drain away the excess oil.

Tasty Bengali Alur Chop is ready. Serve it hot with spicy green chutney or sauce alongwith a hot cup of tea or coffee.
