  1. For the Chicken Marinade
  2. 28 oz (800 g)boneless and skinless chicken thighs or breasts cut into bite-sized pieces
  3. 1/2 cupplain yogurt
  4. 1 1/2 tablespoonsminced garlic
  5. 1 tablespoonminced ginger (or finely grated)
  6. 2 teaspoonsgaram masala
  7. 1 teaspoonturmeric
  8. 1 teaspoonground cumin
  9. 1 teaspoonred chili powder
  10. 1 teaspoonsalt
  11. For the Sauce
  12. 2 tablespoonsolive oil
  13. 2 tablespoonsghee (or 1 tbs butter + 1 tbs oil)
  14. 1large onion, sliced or chopped
  15. 1 1/2 tablespoonsgarlic, minced
  16. 1 tablespoonginger, minced or finely grated
  17. 1 1/2 teaspoonsground cumin
  18. 1 1/2 teaspoonsgaram masala
  19. 1 teaspoonground coriander
  20. 14 oz (400 g)crushed tomatoes
  21. 1 teaspoonred chili powder (adjust to your taste preference)
  22. 1 1/4 teaspoonssalt (or to taste)
  23. 1 cupheavy or thickened cream (or evaporated milk to save calories)
  24. 1 tablespoonsugar
  25. 1/2 teaspoonkasoori methi (or dried fenugreek leaves)

Cooking Instructions

    Preheat oven to 375 degrees F (190 degrees C).

    Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to
    a dark brown, about 15 minutes.

    Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne
    pepper, and garam masala. Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring
    occasionally. Then stir in caramelized onions.

    While the sauce is simmering, toss cubed chicken breast with vegetable oil until coated, then season with tandoori masala and
    spread out onto a baking sheet.

    Bake chicken in preheated oven until no longer pink in the center, about 12 minutes. Once done, add the chicken to the sauce and
    simmer for 5 minutes before serving.
