I love making this cake in the Autumn & Winter months, and particularly at Christmas time, as the warming spices just suit so well. The super fluffy moist center and outer crust with the crunch of sugar make this dangerously morish. You've been warned, one slice may not be enough! 😊

Heat the oven to 160 (fan) and grease a 20cm cake tin with butter. Add the flour, mixed spice & cinnamon to a bowl and mix together then take the cubed butter and add it in and begin rubbing it between your fingers in the flour until crumbs are created.

Next add in the sugar, mix it through then add the vanilla extract, beaten egg & milk. Mix well until a smooth thick batter is formed.

Now add in 2/3rds of the apples & all the sultanas. Mix to incorporate evenly. Spoon the mixture into the greased tin, smooth it over and up to the edges using a spatula then take the remaining apple chunks and gently push them into the top of the cake in a circular pattern around the edges then fill the centre.

Sprinkle all over generously with demerara sugar. Bake on the top middle shelf of the oven for approx 55-60 minutes. Check the centre by placing a toothpick into the center and if it comes out clean the cake is done. Leave to cool for about 5 minutes before turning it out. Enjoy either warm, (with vanilla ice cream or custard is lovely), or cold with a cuppa! Enjoy. :)
