Come Winters and we are flooded with a variety of fresh and healthy Vegetables and Fruits. That's the magic of this Season. And so are the markets too flooded with these sacks of natural goodness these days that are filled with utmost nutritional value.
One such delightful Vegetable are the good old Mushrooms.
This is my way of doing a simple take on the ever popular Indo-Chinese starter dish known to everyone of us as the Chilli Chicken. It's made in two ways, dry and gravy based. In this particular Vegetarian version of it, I have used Mushrooms and kept it mildly gravy based with a bang. That's it.
And also I have kept it a bit simple without actually deep frying the Mushroom halves coated with the batter. As a matter of fact, I have stir fried the Vegetables and have maintained the crunch.
And I usually pack this for Lunch for my family and also serve it for Dinner as well with simple homemade Rotis.

Heat 3 tablespoons of oil in a large pan on a medium high flame. Add the finely chopped green chillies and fry for a few seconds. Add the finely chopped ginger and garlic with spring onion greens. Fry till light brown. Then add cubed onions and capsicums. Stir fry for a few minutes. Add the sauces and toss. Now add the mushroom halves and stir fry.

It should be tender but crunchy. Now reduce the flame to a low and add kashmiri red chilli powder and salt and saute for a few seconds more.

Also add some tomato ketchup. Add it to the pan and saute for about 2 to 3 minutes on a low flame. Add the corn flour slurry and mix it. Add the roasted sesame seeds. Cook on a low flame for few minutes until the sauce is absorbed well.

Garnish with some more sesame seeds, chopped greens of spring onions and coriander leaves. Mix well and switch off the flame. Serve hot with simple homemade rotis on any given day like me. Yum!
