Wash methi leaves 2 times in running water. Chop it.

Heat pan. Add oil. When oil is heated, add mustard seeds. When it starts to splutter, add cumin seeds. Add asaefoitida and curry leaves. Add onion. Cook till it turns to golden pink in colour.

Add all powdered spices such as turmeric powder, red chili powder, kala masala. Saute for a minute.

Add methi. Cook it for 2 minutes. Add salt.

Add besan step by step. Keep stirring otherwise it sticks to bottom. Sprinkle little water.

Cover lid. Cook for 6 to 7 minutes. Stir occasionally.

Methi besan sabzi is ready to serve. Enjoy it with jowar bhakri or bajara bhakri or roti or with dal rice.
