Assemble ingredients

Marinade baby potatoes with little turmeric + salt and marinade for 8-10 minutes.

Make purée of tomato, fry potato till golden brown and keep aside.

In moderately heated pan add oil, allow to heat, add cumin seeds and allow to crackle.
Then add chopped garlic sauté for few seconds then add chopped onion + Asafoetida + 1 green chilli and sauté till golden brown. - 5
Then add tomato purée + green chilli + salt and cook for 2 minutes.

Then add chopped Spinach, mix well and cook for around 2 minutes.

Spinach shrinks, add all spices and sauté till spices release oil. Add 1/2 cup water, cover and cook for 3-4 minutes.

Then add fried potatoes + sugar and further cook for 2 minutes.

Dish is done.

Serve with Paratha and enjoy this winter delicacy.
