Ingredients: 1 oz whole wheat penne rigate; 1 slice fresh unwaxed lemon; 2 crab surimi sticks; 2 1/2 oz cherry tomatoes, chopped; 3/4 oz green leaves; 1/2 oz olive pieces; 1 tbsp fresh parsley, finely chopped; 1 tbsp fresh mint, finely chopped; 1 stalk celery, finely chopped; 1 tsp oregano; Pepper and sea salt; 1 oz full-fat Greek yogurt; 1 tsp grated graviera cheese; 1/2 tsp fresh ginger, grated; 1 little lemon zest; Sea salt and pepper; 1 green onion; 1/2 tsp olive oil

A simple yet very nutritious dish, perfect for dinner. Crab surimi is also an economical food, ideal for days when our budget can't cover fish or seafood. Without the pasta, this salad can make a great sandwich filling.

1 serving

1 ozwhole wheat penne rigate
1 slicefresh unwaxed lemon
2crab surimi sticks
2 1/2 ozcherry tomatoes, chopped
3/4 ozgreen leaves
1/2 ozolive pieces
1 tbspfresh parsley, finely chopped
1 tbspfresh mint, finely chopped
1 stalkcelery, finely chopped
1 tsporegano
Pepper and sea salt
For the dressing
1 ozfull-fat Greek yogurt
1 tspgrated graviera cheese
1/2 tspfresh ginger, grated
1little lemon zest
Sea salt and pepper
1green onion
1/2 tspolive oil

Steps

30 minutes

Soak the surimi in a little salted water for 30 minutes.

Boil the pasta with the lemon slice.

In the bowl where you'll put the salad, mix the dressing ingredients until smooth.

Add the cherry tomatoes with a little salt to release their juices.

Finely chop the remaining vegetables and add them as well.

Cut the surimi into the smallest pieces possible and add it to the salad. Mix very well.

Rinse the pasta with cold water to stop the cooking and add it to the salad. Mix well.

Προέρχεται από το γαλλικό ρήμα "sauter" και η γραμματικά σωστή μεταφορά της λέξης αυτής στην ελληνική γλώσσα είναι με ωμέγα. Ευχαριστώ πολύ.
