Bathua greens often have a lot of dirt, so wash them thoroughly. First, chop the bathua and place it in a colander. Rinse well under running water. If possible, let the chopped greens sit under running water for a while to clean them completely. Shake off excess water and let them dry.

Cut the potato (with skin) into small cubes. Heat 1 tablespoon oil in a skillet, add the potatoes, and fry until lightly golden. Once the potatoes are fried, add the bathua greens, 1 teaspoon salt, turmeric, and sugar. Mix well, then reduce the heat to low, cover, and let it cook.

The greens will release water and cook in their own moisture. Stir occasionally. After 5-10 minutes, check if the potatoes are cooked. Once the potatoes are tender and the greens are dry, remove from heat. Serve hot with rice or roti.
