Green leafy vegetables are a must in our diet. Spinach is one such vegetable which is available all year, but abundant in winters. Rich in vitamin B complex, Iron, calcium, fiber and all micro nutrients, it's a super food. I have made Aloo paalak which is made in different ways all across the country.

Steps

First, wash and dry spinach leaves. Then blanch them in boiling water for 2 to 3 minutes. Immerse in cold water and then blend to a smooth puree' along with 1 pinch baking soda.
Note: It retains the green colour. You can make puree without it too. - 2
Now peel and cut potatoes in medium cubes. Then heat ghee. Add cumin and mustard. When it turns aromatic, add ginger, garlic, chillies, and saute well. Then add onions and stir them till aromatic. Then add chopped tomato and mix well. Sprinkle 1 tablespoon water and mix wel. Add all the spice powders and mix Then add potatoes and stir fry for 5 minutes.

Then add the spinach puree', salt, sugar, 1/2 cup hot water and mix well. Cook open on low flame for 5 to 7 minutes. Then remove and mix lemon juice.

Garnish with coriander leaves and serve piping hot with chapattis or steamed Rice. Enjoy.
