Ingredients

  1. 2eggs
  2. 7 ounceszucchini (about 200 grams)
  3. 1medium red onion (about 3 ounces)
  4. 2 teaspoonsextra virgin olive oil
  5. Unrefined salt flakes and ground pepper to taste

    Wash, peel, and slice the vegetables. I like them very thin (as shown in the images).

    Place them on a steam case tray and cook for 4 minutes and 30 seconds at maximum power in the microwave.

    While the vegetables are cooking, beat the eggs just enough to combine the whites and yolks. It should have the texture shown in the image.

    Remove the vegetables from the microwave and sauté in a pan with 1 teaspoon of extra virgin olive oil, a pinch of salt, and two turns of the pepper mill.

    When they reach the color shown in the image, add them to the eggs and let them soak for 2-3 minutes.

    Cook the tortilla with the remaining teaspoon of extra virgin olive oil to your liking and enjoy!

    I served it with a small glass of chicken broth, and it turned out juicy.
