Ingredients

  1. 1 mediumgreen pepper (chopped)
  2. 1 mediumsweet red pepper (chopped)
  3. 1 smallonion (chopped)
  4. 2 tspolive oil
  5. 1 packagesfrozen vegetarian meat crumbles (thawed)
  6. 2 tbspfresh cilantro (minced)
  7. 1 tspground cumin
  8. 1 1/2 cupsalsa
  9. 5flour tortillas
  10. 1 1/4 cupshredded reduced fat mexican blend cheese (divided)
  11. 1/3 cuppickled jalapeno slices
  12. 5 tbspsliced ripe olives

Cooking Instructions

    In a large pan coated with some cooking spray, sautè peppers and onion in oil until tender.

    Stir in meat crumbles, cilantro and cumin and heat it through

  3. 3

    Spread 1/4 cup salsa into a pie plate.(deep dished preferably and 9 inches) coated with cooking spray

    Layer it with 1 tortilla,fourth of the meat crumble,1/4 cup of salsa, 1/4 cup of cheese,3 jalapeno slices and a tablespoon of olives

    Repeat the layers three times and top with remaining tortilla,salsa,olives,and jalapenos.

    Cover it and bake at 350° for 30 minutes

    Uncover it and sprinkle in some cheese and bake it for 5-10 minutes until cheese is melted.
