Ingredients

  1. Sesame mayo:
  2. 1egg yolk
  3. 2 tspmustard
  4. 1/2juice from 1 lemon
  5. 1/4 cupcanola oil
  6. Salt and pepper to taste
  7. Splashsesame oil
  8. Wasabi purée:
  9. 1avocado
  10. 1/2juice from 1 lime
  11. 2 tspwasabi paste
  12. 2 tbspcanola oil
  13. Splashwater
  14. Salt and pepper to taste
  15. 18cherry tomatoes
  16. 450 gfresh tuna sashimi
  17. 3 tbspJapanese soy sauce
  18. 2 tbspmirin
  19. 1/2 cuptoasted sesame seeds
  20. 1 tsplime zest
  21. Coriander leaves for garnish

Steps

45 minutes
  1. 1

    Sesame mayo:

    Mix egg yolk, mustard and lemon juice and mix in the mixer and then pour the oil slowly until nice and thick mayo.
    Season it with salt and pepper and splash of sesame oil, mix again until weel combine, Set aside.

    Wasabi purée:

    Put 1 avocado, wasabi paste, lime juice and bleach a little bit in food processor. Add water, canola oil and salt & pepper, mix until smooth purée.

    Pass the wasabi purée through the shinoa. Set aside.

    Cut the cherry tomatoes on one side and cook them in boiling water for 30 seconds.

    The put the cherry tomatoes straight away inside the cold water to cool it down. Peel the skin out of the tomatoes.

    Cut the fresh tuna in cubes.

    Mix soy sauce and mirin together and marinate the tuna in soy sauce mixture for 15 minutes.

    Put the tuna in kitchen towel to dry them.
    Mix half of them with sesame seeds and another half leave how the are.

    Season the cherry tomatoes with lime zest, salt and pepper and they are ready to plate.
