Ensenada-Style Fish Tacos

Ingredients: 4 tilapia fillets; 1 cup all-purpose flour (about 120 grams); 1 teaspoon baking powder; 1/2 bottle beer (about 6 ounces or 180 ml); 1 pinch salt; 1 pinch black pepper; 1 pinch ground cumin; 1 pinch paprika; 1 pinch garlic powder; 1 pinch onion powder; enough oil for frying; 1/2 head lettuce or cabbage; mayonnaise, to taste; chipotle morita sauce, to taste; 12 corn tortillas

4tilapia fillets
1 cupall-purpose flour (about 120 grams)
1 teaspoonbaking powder
1/2 bottlebeer (about 6 ounces or 180 ml)
1 pinchsalt
1 pinchblack pepper
1 pinchground cumin
1 pinchpaprika
1 pinchgarlic powder
1 pinchonion powder
enough oil for frying
1/2 headlettuce or cabbage
mayonnaise, to taste
chipotle morita sauce, to taste
12corn tortillas

Mix the flour with the beer, then add garlic powder, onion powder, salt, black pepper, paprika, cumin, and baking powder. Stir until you have a smooth, slightly thick batter.

Rinse the tilapia fillets, drain them, and cut into strips.

Heat enough oil in a skillet. Once the oil is hot, dip each fish strip into the batter and fry on both sides until golden brown.

Drain the fried fish on paper towels. While they drain, warm the tortillas on a griddle. Assemble the tacos by adding lettuce, mayonnaise, and chipotle sauce to taste.
