A simple yet a divine and a healthy recipe. In this variation i have used small Fenugreek Leaves or Methi along with Spring Onion Greens. Nothing can get any simpler than this. The combination of the two ingredients used in this dish is so very amazing and it just blends around so perfectly that one cannot stop drooling over this Vegetarian classic. It is the most wanted dish at my house and our family's favourite. And I hope yours too. It's an absolutely amazing one pot dish that is loved by the children and the adults alike.
And how can it be not relished in Winters when it's the most popular Season for it's spectacular array of fresh and healthy Vegetables and Fruits in the Country. Therefore It's a must have one and so even I made it for Breakfast and also for the Lunchbox. The bursting flavours of freshly done Fenugreek Greens and it's aroma is just so mesmerising. The colour is so inviting. You will definitely love it with homemade Chapatis or Rotis and even Phulkas. It's a numero uno Vegetarian dish if you ask me my opinion about it.
Spring Onion Greens lend that beautiful look to the dish. This simple Sabzi says it all. It has healthy Greens in it. And that is what makes all the lovely difference.

Ingredients

25-30 minutes
5 servings
  1. 2-3 bunchesFenugreek Greens
  2. 2-3 buncheschopped Spring Onion Greens
  3. 3-4cubed Potatoes
  4. 2-3 tbspOil
  5. 1 tspGinger Garlic Green Chilli paste
  6. 1 tspSalt or to taste
  7. 1 tspKashmiri Red Chilli powder
  8. 1/4 tspTurmeric powder
  9. 1/2 tspCoriander powder roasted

Steps

  1. 1

    Wash and chop the fenugreek leaves. Also chop the spring onions or hari pyaaz. Wash and peel the potatoes and cut as desired. I cubed them into very small size or mini to be precise. This is actually done to facilitate some quick cooking as well as to give a great look to the dish in particular.

    In a pan, heat oil and add ginger garlic green chilli paste. Saute it for a few seconds and then add the sliced or chopped spring onions and some of the fenugreek greens. Saute them for a few minutes or until they are translucent and then add the potatoes along with the spices as mentioned. Cover and cook until tender. Alternatively you can deep fry the potato cubes for 3 to 4 minutes and then add. It will give a nice flavour to the dish. Anyways that's purely optional.

    Now add more of the chopped greens and cook on a high flame for about 2-3 minutes. Adjust salt and add chopped coriander leaves too. Cover and cook on a medium flame for just a minute more. And it's done.

    The dish is all ready to be served at mealtimes alongside Rice and Rotis or even both. It goes along well with both. Yum! Enjoy!
