Keep ready in one bowl left over potato sabji and mash it well. Finely chop onion and tomato and keep it ready for serving.

Prepare tamarind chutney, green chutney, and Keep it aside. Now take some curd in a bowl and mix it with salt and little bit of sugar. Mix well.

Now Arrange the puris on a plate. Top it up with mashed potato. Add chopped onions and tomatoes to it.

Sprinkle some chaat masala over it. Top up with the sweet tamarind chutney and green chutney as per taste.

Now add curd on it. Sprinkle sev on top. Then sprinkle some chaat masala and salt. Add a dash of lime juice to the sev puri. Garnish with chopped coriander leaves.

Serve Sev Puri immediately!
