Blanch chopped carrot, green peas, cauliflower florets and reddish in boiling water for 4-5 minutes. Then strain water from it. Spread blanched vegetables on clean cloth for 1-2 hours to dry.

In a bowl take chopped wadhvani green chilies and chopped fresh turmeric. Add little salt and lemon juice. Mix well and Keep aside

Heat oil in a small pan until vapour release. Then cool down completely at room temperature

When all water has dried up take vegetables in a mixing bowl. Add chilli turmeric mixture and lemon pieces too. Add salt, red chili powder, asafoetida, yellow mustard seeds, lemon juice and achar masala. Combine well.

Add oil and give it a good mix. Rest for 7-8 hours. Then fill with jar and enjoy with paratha, roti or masala puri. Store in a fridge.
