First, heat 1 tablespoon of ghee. Add the leaves, 1/2 cup water, and a pinch of salt, and stir well.
Cover and cook for 10 minutes till leaves are softened. - 2
Then add the maize flour, spices powders,
Salt and cook for 5 minutes. Churn this with a buttermilk churner or masher till you have a mashed paste. - 3
Then heat the rest of the ghee, and add cumin seeds. When they pop, add the ginger garlic paste, and saute it. Then add onion, and saute till soft.

Add tomatoes, chilies, and turmeric powder and cook till soft and aromatic. Then add this to the mashed paste. Mix well and adjust the seasonings. Mix the lemon juice and turn off the heat.

Add more ghee on top. Serve to pipe hot with Makke ki roti and lassi. Enjoy!
