Clean and wash the spinach and bathua greens thoroughly, then boil them. Once cooled, blend them with ginger and green chilies to make a fine puree.

In a large mixing bowl, add the flour, spinach puree, red chili powder, ground coriander, salt, and oil. Mix well. Gradually add water as needed to knead into a soft dough. Cover and let it rest for 10-15 minutes.

Grease your hands and knead the dough again. Take a large portion and roll it out into a flat circle. Spread ghee or oil on top, sprinkle with dry flour, then fan-fold and roll it up to form a ball.

Gently roll out the dough ball and place it on a hot griddle. After a few seconds, flip it. When light brown spots appear, apply ghee or oil and cook until golden. Serve hot with green chutney or yogurt.
